Traditionally an Irish wedding cake would be made up of three separate layers of fruit cake mix, which would be covered with almond paste and finally covered with icing. One of the most important ingredients of the cake was the addition of whiskey to each of the layers which was added in celebration of the couple being married.
The addition of the whiskey meant that many wedding cakes were made months in advance, allowing the whiskey to soak into the mixture producing a very distinctive flavour.
The cake was made up of three tiers so that the top tier could be kept to celebrate the christening of the first child born to the couple. The second tier was used as an alternative
To the whiskey laced offerings although this was rarely made without the addition of whiskey!
One of the stranger traditions surround the cake was that once the wedding ceremony was complete then the bride would enter her house only to have her mother in law break a piece of the cake over the brides head.
Rather than being seen as offensive the practice was seen as cementing the relationship between the daughter and mother in law in that they would remain friends for life.
